VANILLA LAVENDER SYRUP

for your iced lavender lattes!

So after a summer's worth of playing around with different flavors and combinations, I think this is my new favorite way to make iced lattes. I feel finessed because I never even had a lavender latte from my coffee shop yet :(


I unexpectedly really love the flavor combination— the floral lavender pairs really well with the bitterness of the coffee and balances things out. Lavender also reminds me of fall so I guess this is perfect timing.

VANILLA LAVENDER SYRUP

  • 1 cup of water

  • 1 cup of sugar

  • 3 - 4 tbsp of dried lavender buds

  • splash of vanilla

  • Optional: food coloring


In a pot, combine your sugar, water, and dried lavender buds. Let the mixture simmer and bubble over medium heat for around 5 minutes (if you heat it for longer it will be thicker, if you heat it less it'll be thinner). You don't really want this to boil so be sure to mix it consistently. Turn off the heat and allow for everything to steep for an additional 20 - 30 minutes.


Once cooled, you can add in your splash of vanilla (this is optional too if you just want regular lavender syrup). You can also add in a few drops of purple or red+blue food coloring to make everything more a e s t h e t i c.


Strain your syrup and enjoy! I really love putting this in my iced lattes but I can imagine how great this would be in lemonade. This should last you around ~2 weeks in the fridge.
